The T1R1/T1R3 receptor detects glutamate, the umami signal (Nelson et al., 2002). Glutamate and 5'-ribonucleotides amplify each other, which is why tomato with parmesan, or kombu with bonito, tastes so rich. Umami appears to feed into the gut's fullness signals, the ones that tell the brain protein has arrived. Cites Nelson et al. (2002), Ikeda (1908).

How strong is the evidence?

Modest and mixed. In one small lab study a savory soup before a meal left people fuller and eating a little less later (Masic & Yeomans, 2014). Other studies find little effect. Treat umami as one helper for a satisfying meal, not an appetite switch.
